• Deep fried cruller dough is made in small batches in house every day. The dough requires extensive physical manipulation as our staff folds and kneads out these 15 pound pieces. Each piece is flipped and folded 3 times to stretch out the gluten and left to rest 30 minutes in between is allow the gluten to resettle. The end result is a dough that we cut up and deep fry every morning that expands to create a crispy texture on the outside but still chewy on the inside. One of the most popular ways to enjoy these cruller is to dip them in some hot soy milk so it soaks it all up or use it as an ingredient in your hot-pots to soak up all that broth.

On my recent OC trip, I dove headfirst into childhood nostalgia with scallion egg rolls and a parade of baked pastries that hit all the right authentic Taiwanese notes, though the Chinese donut could have used a bit more crisp and less chew. The sweet soy milk dodged that burnt taste trap, and while the service felt like a takeout marathon, the comforting flavors and efficient vibe have me plotting my next visit already.
