There's a fantastic Latin food truck near the gas station on Conway Gardens Road and Curry Ford that I can't wait to revisit. The friendly owner serves a variety of large sandwiches, including tripletas and roast pork, all for a reasonable price, along with delicious empanadas. With picnic tables available and a menu in both Spanish and English, it's a great spot to enjoy a meal late into the evening.
