My office building hosts Lish catering pop-ups in the lobby featuring different eateries from around Seattle every weekday, and when I heard that Salu-Salo Filipino Kitchen would be there later in the week, I made sure to grab the last of their delicious chicken adobo, which was tender and vinegary, alongside pancit, rice, and pickled veggies, providing a taste of home that I can't wait to experience again given the limited social media updates and lack of market participation.
